Seared foie gras is a study in restraint: a thick slice of chilled duck foie gras, seared in a screaming-hot pan until burnished outside and melting within, then set on toasted brioche with sweet-tart fruit. It is rich beyond measure, so a little goes a long way.

A prized delicacy of French gastronomy, it is often served at festive meals as a first course. Pair it with a sweet wine or Sauternes, keep the portions small, and let the flavor speak for itself.

  1. Slice the chilled foie gras into ½-inch-thick slices and keep them cold until the last moment.
  2. Sauté the fruit slices in butter with the honey until golden; deglaze with the port and keep warm.
  3. Sear the foie gras slices in a very hot, dry pan for 45 to 60 seconds per side, until deeply browned but still soft within.
  4. Serve immediately on the toasted brioche with the fruit and pan juices; finish with fleur de sel and cracked pepper.
