Fritanga

Fritanga is the Colombian answer to the mixed grill, a platter piled with everything fried that a hungry crowd could want. Served at casual eateries across the country, it is meant to be shared, with arepas, hogao, and lime on the side.

Everything fried, on one heroic platter

Each element brings its own texture: crackling chicharrón, juicy spiced chorizo, rich blood sausage, crispy potatoes, and sweet fried plantain. Dipped through tangy hogao, it is loud, indulgent, and exactly what a celebration should taste like.

Step by stepInstructions

  1. Boil the pork belly in salted water for 20 minutes, drain, and fry over medium-high heat until golden and crisp; set aside.
  2. In the same skillet, fry the chorizo and morcilla slices for 3 to 4 minutes per side until browned; set aside.
  3. Heat the oil and fry the potato wedges for 8 to 10 minutes until golden and cooked through; drain.
  4. Fry the plantains in the same oil for 3 minutes per side until caramelized.
  5. Make a quick hogao: cook the scallion in 1 tablespoon of the oil for 1 minute, add the tomatoes and cumin, and simmer 8 minutes.
  6. Arrange everything on a large platter with the arepas and lime wedges and serve immediately.

💡 Chef tips & storage

Cook the chicharrón first and use its rendered fat for the potatoes — free flavor. Fritanga is a fresh-from-the-pan dish; serve immediately and keep components warm in the oven if cooking in batches.
