Step by stepInstructions

  1. Keep the beef in the refrigerator until just before serving.
  2. Melt the niter kibbeh in a small skillet over low heat; stir in the mitmita, cardamom, and salt and warm for 2 minutes.
  3. Place the cubed beef in a wide serving bowl and pour the warm spiced butter over it; toss to coat.
  4. Serve immediately with awaze for dipping and injera for wrapping.
  5. Let each person spear a cube with a piece of injera and dip it into the awaze.
  6. Scatter sliced red onion on top, if you like.

Ask your butcher for a fresh, never-frozen cut and keep everything chilled until serving. Warm the butter gently — it should melt, never sizzle.
