Havreflarn are Swedish oat cookies that bake into thin, lacy wafers — crackly at the edges, chewy in the middle, and deeply buttery with toasted oat flavor. They are one of Sweden’s most loved fika treats, perfect with coffee.

Drop them small and far apart, because these cookies spread dramatically as they bake. Once cooled, a drizzle of dark chocolate takes them from simple to special, and they keep well in a tin — if they last that long.

Step by stepInstructions

  1. Heat the oven to 350°F and line two baking sheets with parchment.
  2. Cream the butter and sugar until pale, then beat in the egg and vanilla.
  3. Fold in the flour, oats, baking powder and salt.
  4. Drop rounded teaspoons of batter far apart on the sheets — these cookies spread a lot.
  5. Bake 8-10 minutes until the edges are golden and the centers are lacy; cool on the sheets for 2 minutes, then transfer to a rack.
  6. Drizzle with melted chocolate once fully cool.
