Lightly sweet, soft and fragrant brioche-style bread of Portuguese origin.

Portuguese sweet bread, perfected in Hawaii — pillowy, lightly sweet, and so soft it barely needs butter.

Step by stepInstructions

  1. Dissolve the yeast in the warm milk with a pinch of sugar; let stand 5 minutes.
  2. Mix the flour, sugar, and salt; add the yeast mixture, melted butter, eggs, potato, and vanilla.
  3. Knead 10 minutes until smooth and elastic; cover and rise until doubled, about 1 1/2 hours.
  4. Divide into 2 loaves, place in greased loaf pans, and rise 45 minutes.
  5. Brush with beaten egg and bake at 350°F for 30-35 minutes until deep golden. Cool before slicing.

💡 Chef tips & storage

The mashed potato keeps the bread extra soft for days. Butter the top while hot for a glossy, tender crust.
