Humita is one of the oldest dishes of the Andes, and the Argentine version wraps a creamy corn mixture in corn husks (chala) before steaming. It is a taste of the north, where corn is king.

Inside each husk is a soft, almost custardy corn filling that is sweet from the fresh kernels and savory from slow-cooked onion and paprika. The husk keeps it moist and adds a whisper of grassiness.
