Hyderabadi Chicken Biryani - saffron layered rice and chicken

Hyderabadi biryani is the crown of the Deccan, born in the kitchens of the Nizams and now loved across India and beyond. Chicken is marinated in yogurt and spices, layered with par-cooked basmati, and sealed and steamed in its own steam. It is the dish of weddings, holidays, and every celebration worth remembering, and it is worth every minute of the wait.

Layers of saffron-scented perfection

The rice is long, separate, and perfumed with saffron, mint, and fried onions, while the chicken below stays succulent in a tangy, spicy gravy. Each spoonful pulls up a different layer — bright with cilantro, warm with garam masala, rich with ghee — so no two bites are exactly alike. It is a celebration on a plate, meant for slow, happy eating with the people you love. Traditionally the pot is sealed with dough and cooked over the lowest heat, a technique called dum that lets the layers marry into one perfect dish.

Step by stepInstructions

  1. 1. Marinate the chicken with the yogurt, ginger-garlic paste, chili powder, turmeric, garam masala, half the mint, half the cilantro, and salt. Refrigerate at least 1 hour or overnight.
  2. 2. Soak the rice in water for 30 minutes, then cook in salted boiling water until 70 percent done, about 8 minutes. Drain.
  3. 3. Fry the sliced onions in 1 tablespoon ghee until deep golden and crisp. Set aside.
  4. 4. In a heavy pot, cook the marinated chicken over medium heat until the oil rises and the chicken is half-cooked, about 15 minutes.
  5. 5. Layer the par-cooked rice over the chicken. Sprinkle with the fried onions, remaining mint and cilantro, and the saffron milk.
  6. 6. Drizzle the remaining ghee over the top.
  7. 7. Cover with a tight lid, seal the edges with dough or foil, and cook over low heat 25 to 30 minutes.
  8. 8. Rest 10 minutes, then gently fluff and serve with raita.

💡 Chef tips & storage

Use good basmati and rinse it well; the rice should be par-cooked only, about 70 percent done. Let the biryani rest 10 minutes after cooking before opening the lid.
