  1. 1. Soak the rice and fenugreek in one bowl and the urad dal in another, each covered with water, for 4 to 6 hours.
  2. 2. Drain the dal and grind it with a little water into a light, fluffy batter. Grind the rice separately into a slightly grainy batter.
  3. 3. Combine both batters with the salt in a large bowl and whisk well. Cover and set in a warm place for 8 to 12 hours until doubled and bubbly.
  4. 4. Grease idli molds with oil and ladle batter into each cup, filling them about three-quarters full.
  5. 5. Steam over briskly boiling water for 12 to 15 minutes, until a knife inserted comes out clean.
  6. 6. Let rest 2 minutes, unmold, and serve warm with sambar and coconut chutney.

💡 Chef tips & storage

The batter must be thick enough to hold a spoon upright; a runny batter makes flat, dense idlis. If your kitchen is cool, let the batter ferment near the stove or in a turned-off oven with the light on.
