Kikomando is Kampala’s great budget dish, born in the taxi parks where drivers needed something cheap, fast, and filling. A chapati is cut into squares and served over beans simmered in a savory tomato sauce, usually with a slice of avocado on the side. It costs almost nothing and satisfies completely, which is the whole genius of it. Today it has fans far beyond the taxi parks, and for good reason.

The beans are cooked soft and saucy, spiced with garlic and a little curry powder, and the chapati soaks up the gravy while keeping its flaky texture.
