ANZAC biscuits were made during the First World War to send to soldiers of the Australian and New Zealand Army Corps, because oats, coconut, and golden syrup travelled well and kept for months. Today they’re baked every April 25th for ANZAC Day, and all year round for morning tea.
The ideal ANZAC biscuit is crisp at the edges and chewy in the middle, with deep caramel notes from the golden syrup and butter. They’re sturdy enough for lunchboxes but impossible to stop at one.
