  1. Heat the oil in a wide pot over medium heat. Add the cumin seeds and cook until they sizzle.
  2. Add the onion and cook until soft, 4 minutes. Stir in the ginger-garlic paste and cook 1 minute.
  3. Add the turmeric, ground cumin, and chili powder and stir 30 seconds, then add the tomatoes and cook 4 minutes, mashing them slightly.
  4. Add the potatoes and stir to coat, then pour in the water and simmer, covered, 8 minutes.
  5. Add the cauliflower and salt, cover, and simmer 10 more minutes, until the vegetables are tender and the sauce clings to them.
  6. Scatter with cilantro and serve hot with rice or roti.

💡 Chef tips & storage

Cut the potatoes smaller than the cauliflower so they finish at the same time. Do not overcook the cauliflower — it should keep a little bite.
