Kottu Roti — Sri Lankan chopped roti stir-fry

Kottu roti is Sri Lanka’s great street-food obsession, its clanging metal choppers echoing from night stalls in every town. Leftover godhamba roti and curry get minced together with vegetables and egg on a hot griddle, then slapped back onto the plate. It began as a way to use up the day’s rotis and turned into a national favorite. Ask any Sri Lankan what they miss most about home, and kottu is usually near the top of the list, right up there with a good chicken curry.

Each bite is a tangle of chewy, charred roti ribbons, soft egg, and spicy curry gravy, with crunchy carrot and cabbage threading through. Heat level is up to you, but Sri Lankans like it fierce, with a bottle of chili sauce at hand. Serve it with a wedge of lime, and use leftover chicken curry for the most authentic flavor. It is the rare dish that tastes even better slightly charred, with bits of toasted roti crisp at the edges.

Step by stepInstructions

  1. Heat a large cast-iron skillet or griddle over high heat with the oil. Add the onion and cook, tossing constantly, for 2 minutes.
  2. Add the carrots, cabbage, and scallions and toss for 3 minutes, until slightly softened but still crunchy.
  3. Push the vegetables to one side and pour in the beaten eggs; scramble for 1 minute, then mix into the vegetables.
  4. Add the chopped roti, chicken curry and gravy, curry powder, chili flakes, and salt. Toss and chop everything together with two spatulas for 4 to 5 minutes, until the roti is toasted and coated in sauce.
  5. Taste and adjust salt and heat.
  6. Pile onto plates and serve immediately with lime wedges.

💡 Chef tips & storage

Use leftover roti or flatbread that is a day old so it holds its chew, and leftover curry gravy makes this dish. If you do not have godhamba roti, a stack of soft flour tortillas chopped into strips works well.
