Kroketten

Kroketten are the elongated cousins of bitterballen: a smooth, creamy beef ragout breaded and deep-fried until shatteringly crisp. They are a national snack, sold from street counters and served with mustard.

The filling must be chilled until firm so the logs hold their shape during breading and frying. Eat them within minutes of leaving the oil, when the crust cracks to reveal the molten center.

Step by stepInstructions

  1. Melt the butter, stir in the flour, and cook for 2 minutes; whisk in the hot stock and milk and simmer until very thick, about 5 minutes.
  2. Stir in the beef, salt, nutmeg, and pepper; spread on a tray and chill until completely firm, at least 2 hours.
  3. Divide the firm ragout into 8 logs about 4 inches (10 cm) long.
  4. Coat each log in flour, then beaten egg, then breadcrumbs; chill again for 30 minutes.
  5. Fry in 350°F (175°C) oil in batches for about 4 minutes, until deep golden and hot in the center.
  6. Drain on paper towels and serve immediately with mustard.

💡 Chef tips & storage

The double chilling keeps the logs from splitting in the fryer. Serve on soft bread with mustard for the classic Dutch snack.
