Lamb Şiş Kebab

On warm evenings all over Turkey, the smell of lamb over charcoal drifts from backyard grills — the mangal is where summers are spent. Şiş kebab is the heart of that tradition: cubes of lamb shoulder marinated in olive oil, onion, garlic, and a little tomato paste, then threaded onto skewers with peppers and tomatoes. The marinade does double duty, tenderizing the meat and building the crust that makes it irresistible. Everyone has an opinion on the right marinade, and almost every family’s version is a little different.

Smoky, juicy, and gone too soon

The outside turns deep brown and smoky while the inside stays rosy and tender, each piece releasing a rush of garlicky, lemony juice. Alternate the meat with sweet peppers and cherry tomatoes so every bite has a little char and a little sweetness. Let the skewers rest a few minutes before sliding the meat off, and serve with flatbread, sumac onions, and rice pilaf. A quick soak is enough, but the skewers only get better with a few extra hours in the marinade.

Step by stepInstructions

  1. In a bowl, whisk the olive oil, lemon juice, garlic, grated onion, tomato paste, salt, pepper, and oregano.
  2. Add the lamb cubes and toss to coat. Cover and marinate in the fridge for at least 2 hours, or overnight for deeper flavor.
  3. If using wooden skewers, soak them in water for 30 minutes.
  4. Thread the lamb onto skewers, alternating with green pepper chunks and cherry tomatoes, leaving a small gap between pieces.
  5. Heat a grill or grill pan to high. Cook the skewers, turning every 2 to 3 minutes, until the lamb is charred at the edges and cooked to your liking, 8 to 10 minutes for medium.
  6. Rest the skewers for 5 minutes, then slide the meat off onto a platter.
  7. Serve with flatbread, sumac onions, and rice pilaf.

💡 Chef tips & storage

Marinate overnight if you can; the lamb only gets better. Keep the pieces of meat and vegetable separate on the skewer so they cook at their own pace.
