Lamb Thareed

Thareed is said to have been the favorite dish of the Prophet Muhammad, and it remains one of the Gulf’s most beloved meals, especially during Ramadan. It is built on a rich lamb and vegetable stew, ladled over thin, papery bread that soaks up the broth like a sponge. The bread, usually regag, is the whole point: it transforms from crisp to silky as it drinks in the savory liquid, and every layer carries the flavor of the stew.

The stew itself is comforting and homey, with tender lamb, soft zucchini and carrots, and a tomato broth warmed by cumin and turmeric. What makes thareed special is the texture play: soft bread, tender meat, and broth that keeps things moist to the last bite. Serve it in a deep dish so the bread can soak properly, and give everyone a spoon and a piece of bread for scooping.

Step by stepInstructions

  1. Heat the ghee in a large pot and brown the lamb in batches, about 6 minutes per batch. Remove and set aside.
  2. Cook the onion in the same pot until soft, about 5 minutes, then add the garlic, cumin, turmeric, and pepper and cook 1 minute.
  3. Stir in the tomatoes and tomato paste and cook 3 minutes, scraping the bottom.
  4. Return the lamb with the salt and water. Bring to a boil, cover, and simmer 1 hour until the lamb is tender.
  5. Add the zucchini and carrots and simmer 20 minutes more, until the vegetables are soft and the broth is rich.
  6. Taste and adjust the salt. Ladle out about 1 cup of broth and set it aside.
  7. Line a deep serving dish with the torn bread and pour the reserved broth over it so the bread softens.
  8. Spoon the stew over the bread and serve immediately, before the bread turns to mush.

💡 Chef tips & storage

The bread should soak up the broth but still hold its shape, so add it right before serving. Regag crisps as it cools, but in thareed it turns silky — either texture is welcome.
