Pork and fish wrapped in taro leaves and steamed until meltingly tender.

The luau’s steam-bundle

Butterfish and pork wrapped in taro leaves and steamed for hours until the leaves turn silky and the meat melts — pure Hawaii.

Step by stepInstructions

  1. Season the pork and fish with the salt; let sit 15 minutes.
  2. Blanch the taro leaves in boiling water 5 minutes to soften; drain.
  3. Lay out 4-5 taro leaves, overlapping; place a portion of pork and fish in the center and fold the leaves into a tight bundle.
  4. Wrap each bundle in ti leaves or foil.
  5. Place the bundles in a steaming pot with the water, cover, and steam 3 hours, adding water as needed.
  6. Unwrap and serve hot with rice and poi.

💡 Chef tips & storage

Always cook taro leaves thoroughly — they're toxic raw. Butterfish (black cod) is traditional; salmon is a fine substitute.
