Rice, burger, egg, gravy — the four pillars of the loco moco, born in Hilo and beloved across the islands.

Step by stepInstructions

  1. Season the beef with salt, pepper, and Worcestershire; form into 2 thick patties.
  2. Melt the butter in a skillet and cook the patties 4-5 minutes per side; remove and keep warm.
  3. Make the gravy in the same skillet: melt the butter, whisk in the flour, then whisk in the broth and Worcestershire; simmer until thickened. Season.
  4. Fry the eggs in the same skillet until the edges are crisp but the yolks are runny.
  5. Scoop the rice into bowls, top with the patties, ladle over the gravy, and crown each with a fried egg and green onions.

💡 Chef tips & storage

The runny yolk mixing into the gravy is the whole point. Don't skip the Worcestershire — it's in the patty and the gravy.
