Locro is one of the great comfort stews of the Andes, and Bolivia’s version pairs tender beef, hominy, and potatoes in a moderately spicy ají amarillo broth. It is rustic, generous, and the kind of pot that feeds a whole family happily.

The Great Andean Stew

Thick and brothy at once, locro fills the bowl with sweet hominy, soft potato, and shreds of beef in a golden, gently spicy liquid. A handful of cheese melted in at the end makes it rich without losing its rustic soul.

Step by stepInstructions

  1. Brown the beef in the oil over medium-high heat, then add the onion and garlic and cook until soft.
  2. Stir in the aji paste, cumin, and oregano and cook for 2 minutes until fragrant.
  3. Add the broth, bring to a boil, reduce to a simmer, cover, and cook for 45 minutes until the beef is tender.
  4. Add the hominy and potatoes and simmer for 20 to 25 minutes, until the potatoes are soft.
  5. Season with salt, ladle into bowls, and top with the cheese and cilantro.

💡 Chef tips & storage

Shred the beef with two forks right in the pot for a more integrated stew. Locro keeps 3 days in the fridge and freezes beautifully for up to 3 months.
