Mango Pudding — silky jiggly chilled mango pudding with fresh mango and cream

Mango pudding is the dessert of Hong Kong’s dessert shops, a cool, jiggly custard bright with ripe mango and set just firm enough to wobble. It became a favorite in the city’s cha chaan tengs and tong sui shops, where mango is treated with real reverence, and it is the pudding that ends countless dim sum lunches. The best versions taste unmistakably of fruit, not flavoring. Use the ripest, most fragrant mangoes you can find — they carry the whole dessert.

Cool, silky, and bursting with mango

Blended mango gives the pudding a sunny color and a bright, clean flavor, while milk and cream make it silky and light. It should wobble like jelly and melt on the tongue, with extra diced mango on top for good measure. Chill it thoroughly before serving — a cold, wobbly slice of mango is pure happiness on a hot afternoon. It is the easiest of the classic Hong Kong desserts, and the most welcome.

Key ingredients

  • Ripe mango: puréed smooth — the more fragrant, the better.
  • Gelatin or agar-agar: the setting agent — gelatin for a silky set, agar for a firmer, wobblier one.
  • Milk or cream: the creamy body.
  • Sugar: to taste — ripe mango needs very little.

Tips for the perfect mango pudding

Bloom the gelatin in cold water (or dissolve agar in hot liquid) and make sure it is fully dissolved — undissolved gelatin leaves streaks. Purée the mango until completely smooth and strain it for a silky result. Stir the warm milk mixture into the purée gently, pour into molds, and chill for at least 4 hours. To unmold, dip the mold in hot water for a few seconds and invert. Top with fresh mango cubes before serving.

Variations and storage

Add coconut milk for a tropical version, layer it with sago pearls, or serve it with a drizzle of evaporated milk Hong Kong-style. Mango pudding keeps 3 days in the fridge, covered — though the fresh mango topping is best added just before serving.

Step by stepInstructions

  1. Blend 1 1/2 cups of the mango with the milk, cream, sugar, and lemon juice until smooth.
  2. Sprinkle the gelatin over the hot water and stir until completely dissolved.
  3. Whisk the gelatin into the mango mixture until combined.
  4. Stir in the remaining diced mango and pour into 6 small glasses or ramekins.
  5. Chill for at least 4 hours, until set and wobbly.
  6. Garnish with mint and serve cold.

💡 Chef tips & storage

Use the ripest mangoes you can find — the fruit carries the whole dessert. Pudding keeps 2 days chilled; just cover the glasses so they don't pick up fridge smells.
