  1. Simmer the wild rice in the chicken broth until tender and split, about 40 minutes; set aside with the broth.
  2. Melt the butter in a large pot and cook the onion, carrots, and celery until soft, about 6 minutes.
  3. Whisk in the flour and cook 2 minutes; gradually whisk in the milk and cream and simmer until thickened, about 5 minutes.
  4. Stir in the rice, its broth, the chicken, salt, pepper, and thyme; simmer 10 minutes.
  5. Season to taste, finish with parsley, and serve hot.
