Mote con huesillo is Chile’s iconic summer drink-dessert, sold from carts on every sunny street corner. Dried peaches (huesillos) are simmered with sugar and cinnamon into a golden syrup, then served over cooked husked wheat (mote) with plenty of ice.

The peach syrup is honeyed and lightly spiced, the dried peaches soft and jammy, and the mote adds a pleasant, nutty chew. Ice-cold and deeply refreshing, it’s equal parts drink and dessert — and pure nostalgia.
