  1. Salt the eggplant slices and let them drain 30 minutes; pat dry. Brush with olive oil and roast at 400°F until golden, about 20 minutes.
  2. Brown the lamb in a large skillet; add the onion and garlic and cook until soft. Add the tomatoes, cinnamon, oregano, salt, and pepper; simmer 20 minutes until thick.
  3. Make the béchamel: melt the butter, whisk in the flour for 1 minute, then add the milk gradually, whisking until thick. Off the heat, stir in the cheese and eggs.
  4. Layer half the eggplant in a 9x13-inch dish, cover with the meat sauce, then the remaining eggplant.
  5. Pour the béchamel over the top and spread it evenly.
  6. Bake at 350°F for 45-50 minutes until deeply golden. Rest 20 minutes before slicing.
