The gravy is thick and glossy, built from onions browned until mahogany, coconut, and a blend of whole spices, with curry leaves and coriander adding depth. The lamb absorbs all of it, becoming rich and savory with a gentle heat that lingers long after the meal. Ladled over rice with a spoon of ghee, it is a meal worth the wait, and leftovers are a gift. The gravy is made to be sopped up with parotta or appam, so keep it on the looser side and do not hold back on the salt.

  1. 1. Dry-roast the coriander, cumin, peppercorns, dried chilies, and coconut until fragrant, about 4 minutes. Cool and grind to a paste with a little water.
  2. 2. Heat the oil in a heavy pot and brown the onions over medium heat until deep golden, 12 to 15 minutes.
  3. 3. Add the cinnamon, cloves, ginger-garlic paste, and curry leaves and cook 2 minutes.
  4. 4. Add the tomatoes and cook until soft, about 5 minutes.
  5. 5. Add the ground spice paste and salt and cook 3 to 4 minutes until the oil separates.
  6. 6. Add the lamb and sear 5 minutes, then pour in 2 cups hot water. Cover and simmer 1 hour 15 minutes, or until the meat is tender and the gravy thickens.
  7. 7. Serve hot with rice or parotta.

💡 Chef tips & storage

Brown the onions deeply — they are the backbone of the gravy. For faster cooking, pressure-cook the meat for 20 minutes instead of simmering.
