Puffy, golden fried dough with a crisp exterior and soft interior, a foundational Southwest Native American recipe.

Dough, fire, and history

Simple flour dough, stretched and fried until puffy — the base for Navajo tacos or a sweet finish with honey.

Step by stepInstructions

  1. Whisk the flour, baking powder, salt, and powdered milk in a bowl.
  2. Stir in the warm water until a soft dough forms; knead 3 minutes. Cover and rest 30 minutes.
  3. Divide into 6 pieces and roll or stretch each into a thin 8-inch round.
  4. Heat 1 inch of oil to 375°F.
  5. Fry each round 1-2 minutes per side until puffed and golden. Drain on paper towels and serve immediately with honey or as taco bases.

💡 Chef tips & storage

Resting the dough makes it stretchy and light. Keep the oil hot — if it's too cool, the bread soaks up oil instead of puffing.
