Step by stepInstructions

  1. Heat the oil in a heavy pot and brown the beef over medium-high heat, about 8 minutes. Set aside.
  2. Cook the onion in the same pot until golden, about 6 minutes.
  3. Add the garlic, ginger, and curry powder, and cook 1 minute.
  4. Stir in the tomatoes and cook until softened, about 4 minutes.
  5. Return the beef to the pot with the broth, salt, and pepper. Cover and simmer until the beef is tender, about 35 minutes.
  6. Add the plantain chunks and simmer gently, uncovered, until they are soft and the sauce thickens, about 15 minutes.
  7. Serve hot over rice or beside ugali.

💡 Chef tips & storage

Use plantains that are ripe but still firm; fully black ones will dissolve into the sauce. The plantains sweeten the gravy, so go easy on added salt.
