A beef chuck roast slow-braised with root vegetables until fork-tender in a rich, savory gravy.

A big chuck roast, a hot oven, and patience — this is the Sunday dinner that fills the house with the smell of comfort.

Step by stepInstructions

  1. Preheat the oven to 325°F. Season the roast with salt and pepper.
  2. Heat the oil in a Dutch oven and sear the roast on all sides until deeply browned, about 8 minutes; remove.
  3. Cook the onion in the same pot until soft; add the garlic and tomato paste and cook 1 minute.
  4. Pour in the wine and scrape up the browned bits; add the broth, thyme, and bay leaf. Return the roast, cover, and bake 2 1/2 hours.
  5. Add the carrots, potatoes, and celery around the roast, re-cover, and bake 45-60 minutes more until the meat is fork-tender. Skim the fat and serve with the vegetables and gravy.
