Anise and cinnamon-sugar make biscochitos unmistakable — crisp, buttery cookies born in New Mexico’s Spanish kitchens.

  1. Whisk the flour, baking powder, and salt.
  2. Beat the lard and sugar until fluffy; beat in the egg, anise seeds, brandy, and vanilla.
  3. Stir in the dry ingredients until the dough comes together. Chill 1 hour.
  4. Preheat the oven to 350°F. Roll the dough 1/4-inch thick and cut into rounds or fleur-de-lis shapes.
  5. Mix 1/4 cup sugar with the cinnamon; dip the cookies in it, place on parchment-lined sheets, and bake 10-12 minutes until the edges are just golden.

💡 Chef tips & storage

Lard is traditional and gives the right crumb — shortening works in a pinch. Don't overbake; they should be pale with golden edges.
