Nopales are the tender pads of the prickly pear cactus — grilled, they turn tangy and slightly crisp, perfect in a bright salad.

Step by stepInstructions

  1. If using fresh nopales: trim the spines, rinse, and pat dry. Brush with olive oil and salt.
  2. Grill or griddle the paddles 4-5 minutes per side until tender with char marks. Cool, then slice into strips.
  3. Toss the nopales with the tomatoes, onion, jalapeño, cotija, and cilantro.
  4. Whisk the lime juice, extra olive oil, and pepper; pour over the salad and toss. Serve chilled or at room temperature.

💡 Chef tips & storage

Fresh nopales release a slimy liquid — salting and grilling them tames it. Jarred nopales are a great shortcut.
