Corn has fed Ontarians since the first Indigenous farmers planted it along the Great Lakes, and by the 1800s, sweet corn was a cash crop across the province’s south. The chowder was the natural way to stretch a summer’s corn harvest into a satisfying meal — the word itself comes from the French chaudière, the big pot fishermen and farmers cooked in. Every Ontario cook has a version, and the best ones start with corn cut fresh from the cob, with the milky cobs simmered right in the pot for extra sweetness.

What makes it great is the layers of flavour: smoky bacon, sweet corn, tender potatoes, and a creamy broth that tastes like summer in a bowl. It’s hearty enough to be a meal on its own with a hunk of crusty bread, yet light enough for a warm August evening. Make it in high corn season when the ears are at their sweetest, and you’ll understand why this chowder has survived for generations.

Step by stepInstructions

  1. Cook the bacon in a large pot over medium heat until crisp, then remove it with a slotted spoon, leaving the drippings in the pot.
  2. Sauté the onion and celery in the bacon drippings for 5 minutes, until softened.
  3. Sprinkle in the flour and cook for 2 minutes, stirring constantly.
  4. Gradually whisk in the chicken stock, then add the corn, potatoes, and thyme, and simmer for 15 to 20 minutes, until the potatoes are tender.
  5. Stir in the milk and cream and simmer gently for 5 more minutes, without boiling.
  6. Season with the salt and pepper, taste, and adjust.
  7. Serve hot, topped with the reserved bacon.

💡 Chef tips & storage

For the sweetest chowder, cut the kernels off the cob and simmer the bare cobs in the stock for 10 minutes before straining — it adds a deep corn flavour. The chowder thickens as it sits; thin it with extra milk when reheating. It keeps for 4 days in the fridge.
