Ossobuco alla Milanese - braised veal shanks with gremolata and saffron risotto

Ossobuco alla Milanese is Milan’s iconic braised veal shank, cooked low and slow until the meat slips from the bone and the marrow turns glossy. Saffron perfumes the classic accompanying risotto for a golden, celebratory feast.

This is festive cooking at its finest and the centerpiece of special Milanese tables. Spoon the golden saffron risotto alongside, scatter gremolata over everything, and pour a bold red wine.

Step by stepInstructions

  1. Season the shanks, dredge in flour, and brown well on both sides in the oil and half the butter; set aside.
  2. Soften the onion, carrot, and celery in the same pot; deglaze with the wine and simmer until reduced by half.
  3. Return the shanks with the tomatoes and broth; cover and braise over low heat until fork-tender, about 2 hours.
  4. Meanwhile, make the risotto: cook the remaining onion in the remaining butter, add the rice, and toast 2 minutes.
  5. Add warm broth a ladle at a time, stirring, until the rice is creamy, about 18 minutes; stir in the saffron broth and Parmesan near the end.
  6. Combine the gremolata and serve the shanks over the saffron risotto with gremolata scattered on top.

💡 Chef tips & storage

The saffron risotto is the traditional bed for the shanks, so time both to finish together. Rest the braised meat in its liquid, off the heat, for 10 minutes before serving.
