The oxtail braises for hours in red wine and tomato until it is impossibly tender, its rich, gelatinous sauce turning silky and deep. It is often cooked as a potjie on the fire, but it is every bit as good on the stove.

  1. Season the oxtail with salt and pepper. Heat the oil in a large heavy pot and brown the pieces in batches on all sides, about 8 minutes per batch. Set aside.
  2. In the same pot, cook the onions until soft and golden, about 8 minutes. Add the garlic and cook 1 minute more.
  3. Sprinkle in the flour and stir for 2 minutes, then pour in the red wine, scraping up the browned bits.
  4. Add the stock, tomato paste, tomatoes, bay leaves, and thyme, and return the oxtail to the pot.
  5. Bring to a boil, then reduce to a very low simmer. Cover and cook for 2 hours, stirring occasionally.
  6. Add the carrots and simmer uncovered for 1 hour more, until the meat is falling off the bone and the sauce is thick and glossy.
  7. Skim off excess fat, taste for seasoning, and serve over pap, samp, or creamy mashed potatoes.

Brown the oxtail in batches so it caramelizes instead of steaming. The stew is even better made a day ahead — chill it, then lift off the set fat before reheating.
