Breadfruit has fed the Pacific for over three thousand years — a single tree can yield hundreds of fruits a season. Roasting it whole over fire until the outside blackens is the classic preparation, the flesh inside turning pale gold with a texture between potato and fresh bread.
The flavour is mild and faintly sweet, which is why it is served alongside nearly everything, from lovo pork to grilled fish. Eat it warm, drizzled with coconut cream and a little salt.
