Paneer tikka is the vegetarian jewel of the tandoor, the starter that shows up at every North Indian restaurant and wedding buffet. Cubes of paneer and colorful peppers are threaded onto skewers, coated in a spiced yogurt marinade, and grilled until the edges char and smoke. It is the dish that converts skeptics into paneer lovers at the very first bite.

Charred edges, creamy middle

The yogurt marinade, sharpened with lemon and ginger-garlic, clings to the paneer and turns into a golden, lightly charred crust over the heat. Inside, the paneer stays soft and milky, a lovely contrast to the crisp peppers and the smoky char. A dusting of chaat masala right off the grill adds a tangy, almost citrusy pop that makes it irresistible.   1. In a bowl, whisk together the yogurt, ginger-garlic paste, lemon juice, chili powder, turmeric, cumin, garam masala, mustard oil, and salt.
  2. Gently fold in the paneer cubes, peppers, and onion, making sure everything is coated. Cover and marinate in the fridge for 30 minutes.
  3. Meanwhile, soak wooden skewers in water for 20 minutes, or preheat a grill to medium-high.
  4. Thread the paneer, peppers, and onion onto the skewers, alternating and leaving small gaps between pieces.
  5. Grill or broil for 10 to 12 minutes, turning every few minutes, until the paneer is charred in spots and the vegetables are tender.
  6. Sprinkle with chaat masala and serve immediately with mint chutney and lemon wedges.

💡 Chef tips & storage

Marinate the paneer for about 30 minutes, not longer, or the acid in the yogurt can make it rubbery. Thread the pieces loosely on the skewers so they char instead of steaming.
