Panqueques con Dulce de Leche

Panqueques con dulce de leche is what Argentine kids (and adults) dream about: thin crepes, warm from the pan, filled with the country’s favorite caramel. It is the dessert that needs no occasion.

The dessert that needs no occasion

The crepes are soft and delicate with buttery edges, and the dulce de leche melts slightly against their warmth. A snowfall of powdered sugar on top and you are done — elegant in its simplicity.

Step by stepInstructions

  1. Whisk the flour, eggs, milk, melted butter, sugar, and salt into a smooth batter, and let it rest for 30 minutes.
  2. Heat a small nonstick skillet over medium heat, brush with butter, and pour in a ladleful of batter, swirling to coat the bottom thinly.
  3. Cook for 45 to 60 seconds until the edges lift and the bottom is golden, then flip and cook 30 seconds more; stack the crepes on a plate.
  4. Spread 2 tablespoons of dulce de leche over each warm crepe, leaving a small border.
  5. Roll each crepe into a tight cylinder and arrange them on plates.
  6. Dust generously with powdered sugar and serve warm.

💡 Chef tips & storage

The batter should be the consistency of thin cream — add a splash more milk if it feels heavy. For a dressed-up version, spoon extra dulce de leche over the top and torch it briefly for a caramelized crust.
