Papua New Guinea Mumu Pork

Mumu is Papua New Guinea’s great earth-oven feast: pork and root vegetables wrapped in banana leaves and steamed over hot river stones until meltingly tender. It is cooked for sing-sings, village celebrations and any occasion that calls for the whole community to gather.

The result is a smoky, juicy pork that has soaked up the flavour of banana leaves and sweet potato, with vegetables that turn buttery-soft. At home, a slow oven with liquid smoke captures the spirit beautifully.

Step by stepInstructions

  1. Rub the pork with the salt and liquid smoke. Lay banana leaves (or foil) in a deep roasting pan.
  2. Spread the sweet potato, taro and onion in the pan and nestle the pork on top.
  3. Cover with the greens, then seal tightly with more banana leaves and foil.
  4. Roast at 300°F for 4-5 hours, until the pork is falling apart.
  5. Unwrap carefully, shred the pork and toss with the vegetables and coconut cream if using. Serve with steamed rice.

The banana leaf isn't just for tradition — it keeps the meat moist and adds a subtle sweetness. If you can't find it, heavy foil works; just seal well and add 1/4 cup water before closing.
