Pitpit in Coconut Cream

Pitpit, the tender shoots of a wild cane, is one of the highlands’ most treasured vegetables, picked young when it is sweet and crisp. The classic way to cook it is to simmer the shoots slowly with coconut cream and crushed peanuts until they turn meltingly soft and rich. It is the vegetable dish that highlanders miss most when they travel.

What makes pitpit in coconut cream great is its unusual sweetness and creamy depth. The shoots taste a little like a cross between asparagus and young corn, and they drink up the coconut and peanut sauce beautifully. It is wonderful beside roasted meats, grilled fish, or simply with rice.

Step by stepInstructions

  1. Trim the pitpit shoots, removing the tough ends and any stringy outer layer, and cut them into 2-inch pieces.
  2. In a pot, cook the onion and garlic in a splash of coconut cream until soft, about 3 minutes.
  3. Add the pitpit, coconut cream, water, and salt, and bring to a gentle simmer.
  4. Cover and cook for 20-25 minutes, until the shoots are completely tender.
  5. Stir in the crushed peanuts and chili, and simmer uncovered for 5 minutes until the sauce thickens.
  6. Taste and adjust the salt, then serve warm.

💡 Chef tips & storage

If you cannot find pitpit, green beans or asparagus make a good substitute, though they will need less cooking time. Simmer gently until very soft, as that is how the dish is traditionally enjoyed.
