In the sago-growing regions of Papua New Guinea, the day often starts with sago pancakes. Sago flour is mixed with coconut milk and a little sugar, then fried in coconut oil until the edges turn lacy and crisp. They are the taste of mornings along the Sepik and the coast, warm, sweet, and deeply filling.

What makes sago pancakes great is their wonderful chew. Unlike flour pancakes, they have a soft, slightly stretchy center and crackling edges, with a gentle sweetness from the coconut and sugar. They are wonderful on their own or topped with ripe banana, and they keep you full for hours.

Step by stepInstructions

  1. Whisk the sago flour, coconut, sugar, and salt together in a bowl.
  2. Pour in the coconut milk and water and whisk until you have a thick, pourable batter. Rest for 10 minutes.
  3. Heat a little coconut oil in a skillet over medium heat.
  4. Pour in 1/4 cup of batter per pancake and cook for 2-3 minutes, until the edges are crisp and golden.
  5. Flip and cook for 1-2 minutes more. Repeat with the remaining batter.
  6. Serve warm, topped with banana slices if you like.

💡 Chef tips & storage

The batter should be thick but pourable; add water a spoonful at a time if it is too stiff. Eat the pancakes hot, as they lose their crisp edges as they cool.
