- On a floured surface, roll the puff pastry slightly thinner and cut it into 4-inch (10 cm) squares.
- Place a slice of guava paste and a teaspoon of cream cheese in the center of each square.
- Brush the edges with beaten egg, fold each square into a triangle, and press the edges with a fork to seal.
- Brush the tops with egg, sprinkle with sugar, and cut two small slits for steam.
- Bake for 18 to 22 minutes, until puffed and deep golden brown.
- Cool for 10 minutes on the sheet, brushing with simple syrup if you want the classic sheen, and serve warm with café cubano.
