Perico Venezolano

Perico is Venezuela’s classic breakfast scramble, named for the parrot-like mix of yellow egg, red tomato, and green pepper. It is the standard filling for the morning arepa or the perfect companion to crusty bread and a strong cup of coffee.

A parrot-bright scramble

The eggs stay soft and creamy, barely set, while the vegetables keep a little bite and release their sweet juices. It is simple, colorful, and satisfying — proof that the best breakfasts do not need much.

Step by stepInstructions

  1. Whisk the eggs with the salt and pepper until just blended.
  2. Melt the butter in a skillet over medium heat and cook the onion and bell pepper 5 minutes until soft.
  3. Add the ham, if using, and the tomatoes and cook 2 to 3 minutes until the tomatoes release their juice.
  4. Pour in the eggs and stir gently with a spatula over medium-low heat until soft curds form and the eggs are just set, about 2 to 3 minutes — keep them creamy.
  5. Serve immediately with warm arepas, bread, or a side of black beans.

💡 Chef tips & storage

Pull the eggs off the heat while they still look slightly underdone — they finish cooking in the pan. Perico does not keep well, so make only what you will eat.
