- In a mortar or blender, combine the garlic, oregano, pepper, salt, olive oil and vinegar into a wet adobo paste.
- Toss the pork cubes in the adobo along with the sofrito and half the barbecue sauce, cover, and refrigerate at least 4 hours, ideally overnight.
- Thread 4 to 5 pork cubes onto each skewer.
- Grill over medium-high heat, turning often and basting with the remaining barbecue sauce, until charred at the edges and cooked through, 12 to 15 minutes.
- Rest 5 minutes and serve hot, straight off the skewer.
💡 Chef tips & storage
Do not crowd the skewers; leave a little space between cubes so they char instead of steam. For pinchos de tocino, wrap each cube in a half-strip of bacon before skewering.
