Profiteroles are the joyful French dessert of airy choux pastry puffs filled with vanilla ice cream and drowned in warm, glossy chocolate sauce. The contrast of crisp shell, cold cream, and hot sauce is the whole point.

Step by stepInstructions

  1. Make the choux: boil the water, milk, butter, salt, and sugar; beat in the flour and cook 2 minutes. Beat in the eggs one at a time until glossy.
  2. Pipe small mounds onto a lined sheet and bake at 400°F for 25 to 30 minutes, until puffed and golden. Cool completely.
  3. Make the sauce: melt the chocolate with the cream over low heat, stirring until glossy.
  4. Split the puffs, fill them with vanilla ice cream, and arrange on plates.
  5. Douse with warm chocolate sauce and dust with powdered sugar. Serve immediately.
