Puchero came from Spain and found a second home in the Argentine kitchen, where it became a hearty one-pot meal of beef, sausages, and sweet potatoes. The broth is served first, then the meat and vegetables follow.

Two courses, one pot

The beef turns fork-tender and the sweet potatoes and pumpkin go soft and sweet, while the broth becomes rich and fragrant. It is wholesome, generous, and exactly what cold days call for.

Step by stepInstructions

  1. Place the beef, chorizos, bacon, onion, and leeks in a large pot with the water and salt, and bring to a boil; skim the foam, then reduce to a gentle simmer.
  2. Cook for 1 hour, until the beef is starting to soften.
  3. Add the pumpkin, sweet potatoes, potatoes, carrots, and corn, and simmer for 45 minutes more.
  4. Add the cabbage wedges and cook for a final 15 minutes, until everything is tender but not falling apart.
  5. Ladle the broth into bowls and serve it as a first course, then arrange the meat and vegetables on a large platter for the main event.
  6. Season with extra salt and serve with chimichurri on the side if you like.

💡 Chef tips & storage

Keep the pieces big so nothing dissolves into the broth. Leftovers keep 4 days refrigerated, and the broth makes a fantastic base for soup or rice.
