Puchero is Uruguay’s great homely stew, a distant cousin of the Spanish cocido that fills the house with steam on cold winter days. It is served in two acts: first the rich broth ladled over rice, then the tender meats and vegetables as the main event.
One pot, two courses, hours of comfort
The long simmer coaxes the beef into buttery shreds while sweet potato, pumpkin, and corn each contribute their own gentle sweetness to the golden broth. The chorizo perfumes everything, and the cabbage soaks up the juices until it is meltingly soft.
