Rappie pie was born in Clare, Nova Scotia, where Acadian families have made it for generations. The name comes from rapure, the grated potato that is squeezed almost completely dry, then re-hydrated with rich meat broth until it bakes into a chewy, golden-crusted marvel.
It is a labour of love — grating and wringing a mountain of potatoes is no quick job — but the payoff is a slice that is crisp on top, tender inside, and impossibly savoury. Served with a splash of ketchup or molasses, it is the dish Acadians drive hours home for.
