In the elegant city of Tlemcen, Friday lunch means rechta: a mountain of feather-light fresh noodles soaked in golden chicken broth, crowned with chicken, chickpeas, and turnips. The pasta is traditionally rolled and cut by hand the morning of the meal, and the day begins early so the table is ready by noon. It is a dish of patience and generosity, always served to a full table.

A snow-white mountain in a pool of golden broth

The noodles are delicate and slippery, the broth light yet deeply savory, and the turnips add a gentle sweetness that balances the turmeric and ginger. Each bowl is finished at the table with a dusting of cinnamon sugar, a dab of harissa, or both — a sweet-and-spicy ritual that makes rechta unforgettable. Eat it the way Tlemcen does, slowly, with everyone reaching for seconds. It is also a dish of grand occasions, made when guests are expected and there is time to make something beautiful.

Step by stepInstructions

  1. Heat the oil in a large pot and cook the onions until golden, about 8 minutes. Add the chicken and brown lightly on all sides.
  2. Stir in the turmeric, ginger, salt, and pepper, then pour in the broth. Bring to a simmer, cover, and cook 35 to 40 minutes, until the chicken is tender.
  3. Add the turnips and chickpeas and simmer 15 minutes more. Remove the chicken and shred it or leave it in pieces.
  4. Cook the noodles in a pot of salted boiling water for 2 to 3 minutes, until just tender. Drain.
  5. Pile the noodles in a deep platter, arrange the chicken on top, and ladle the broth, turnips, and chickpeas over everything.
  6. Sprinkle with parsley and serve with the cinnamon sugar and harissa on the side.

💡 Chef tips & storage

Fresh noodles cook in minutes — don't boil them ahead of time. Cinnamon sugar and harissa are traditional partners; guests sprinkle their own.
