Grilled rye sandwich with corned beef, sauerkraut, swiss cheese

The Reuben is a New York deli heavyweight — corned beef, Swiss cheese, sauerkraut, and Russian dressing grilled between slices of rye until the bread is crisp and the cheese melts into the kraut. Whether it was born in Omaha or New York, it’s become a deli counter classic everywhere.

Chef Emily presents Reuben Sandwich

The deli counter heavyweight

Corned beef, sauerkraut, Swiss, and Russian dressing on griddled rye — the Reuben, a deli classic with serious staying power.

Step by stepInstructions

  1. Butter one side of each slice of bread. Spread the dressing on the unbuttered side of four slices.
  2. Build the sandwiches: corned beef, sauerkraut, then Swiss, and top with the remaining bread, buttered side out.
  3. Heat a griddle or skillet over medium heat. Cook the sandwiches 3-4 minutes per side, pressing gently, until golden and the cheese melts.
  4. Cut in half and serve hot.

💡 Chef tips & storage

Drain the sauerkraut well and squeeze out the excess liquid so the sandwich stays crisp, not soggy. Griddle it with buttered bread until deep golden and the cheese is fully melted.
