A traditional Baja California dish — Rock Cod Tacos celebrate the fish that made Ensenada famous: mild, flaky rock cod in a crackling beer batter. When the panga boats unload their rock cod at the Ensenada docks, the taqueros are waiting, and by noon the first tacos are already frying. It is the same beloved Baja taco, built around the very fish that started it all.

Step by stepInstructions
- Whisk the flour, cornstarch, baking powder, salt, and garlic powder; whisk in the ice-cold beer until smooth.
- Season the rock cod strips with salt and pat them very dry.
- Heat an inch of oil in a heavy skillet until a drop of batter sizzles immediately.
- Coat the fish in the batter and fry in batches until deep golden, about three minutes per batch; drain on paper towels.
- Warm the tortillas and build the tacos: fish, cabbage, crema, salsa fresca.
- Serve at once with lime wedges.
💡 Chef tips & storage
Patting the fish dry before battering keeps the crust attached. If rock cod is unavailable, lingcod, halibut, or tilapia are honest substitutes.
