Step by stepInstructions

  1. Cook the bacon in a large pot over medium heat until crisp, then remove it with a slotted spoon and set aside.
  2. Sauté the onion and celery in the bacon fat for 5 minutes until softened, then add the garlic and cook for 1 minute more.
  3. Add the potatoes, stock, and thyme, bring to a boil, then simmer for 15 minutes until the potatoes are tender.
  4. Stir in the corn and cream and simmer for 5 minutes, then season generously with salt and pepper.
  5. Add the salmon chunks and simmer gently for 4 to 5 minutes, until the fish is just cooked and flakes apart.
  6. Stir in the reserved bacon and parsley, ladle into bowls, and serve hot.
