Salmorejo is Córdoba’s thicker, creamier cousin of gazpacho: tomatoes, bread, garlic, and olive oil blended into a silky pink soup with the texture of velvet. It is richer and more substantial, designed to be eaten with a spoon.
It is traditionally crowned with diced serrano ham and hard-boiled egg, which add salt and richness against the cool purée. Serve it ice-cold in summer as a starter or light lunch.
