The three mountains of Salzburg

Salzburger Nockerl is a soufflé shaped into three peaks said to represent the mountains around Salzburg — Mönchsberg, Kapuzinerberg, and Gaisberg. Since the 17th century it has graced the city’s tables, served warm, wobbly, and gone in minutes.

Step by stepInstructions

  1. Preheat the oven to 400°F. Butter a 9-inch ovenproof dish generously.
  2. Beat the egg whites with 3 tablespoons of the sugar to stiff, glossy peaks.
  3. In another bowl, whisk the egg yolks with the remaining sugar, vanilla, flour, and 2 tablespoons of the milk until pale.
  4. Fold the yolk mixture into the whites gently — streaks are fine.
  5. Warm the remaining milk and pour it into the buttered dish. Spoon the soufflé mixture into three tall peaks, dust with powdered sugar, and bake 10-12 minutes until the peaks are golden brown and the base is set.
  6. Serve immediately with the compote spooned around.

💡 Chef tips & storage

Everything happens fast — have the dish buttered and the compote ready before you whip the whites. The nockerl must go from oven to table in minutes or they deflate.
